Cooking Instructions
- 1
Combine the oyster sauce, sriracha, mirin, garlic and sugar in a bowl. Add cayenne pepper to taste.
- 2
Blanch the frozen vegetables, drain and set aside. Do the same for the udon noodles.
- 3
Quickly sear the tofu in a pan with a dash of olive oil until a light crust develops. Set the tofu aside.
- 4
Using the same pan, add some olive oil and wait for it to heat up. Add the sauce ingredients to the pan, cooking the sauce for a few seconds before adding the udon and vegetables.
- 5
Stir fry for a few minutes then add the tofu. Season with pepper to taste.

I was going to make yuzu pepper pasta when the hubby said "I want udon!" This was the recipe I came up with then. After you add the noodles to the pan you need to work quickly, so have all the seasoning ingredients pre-measured and ready to go. If you don't like spicy food, adjust the amount of yuzu pepper to your taste. Stir fry the meat until it's crispy for the best flavor. Use whatever vegetables you have.
