The pepper is a real flavor additive in this dish, but you could sub carrots or other veggies if you are not a pepper fan. This is a very mild dish, and the shrimp do have a nice flavor done this way. This can be under salted, so taste and adjust to your liking. My measurements are just reference points for salt. You can actually make this dish without rice, and use it as part of a meal with other sides. Fo Fa -

#mycookbookAnother ‘fried rice’ variant that I love ❤️ so so much! Use fresh shrimps to get the sweetness of the shrimps and remember not to cook them too long 😊😋 If you like my recipes, please follow my Instagram @jenscookingdiary for the Indonesian recipes or @jenscookdineandtravel for the English recipes 🙏🏻😊😘 jenscookingdiary -

Indonesians call dried shrimps "ebi". In my opinion, one of the best ebi here can be found in a city called Medan. Along with teri Medan, ebi Medan is famous for its versatility and umami flavor. I like to soak it a bit in the water, but some prefer to use it as is. Ebi can be used in fried rice, fried noodles, soup, sambal, and a bunch of others.I used black and regular rice for this fried rice (1:5 made in rice cooker) so the steamed rice is purplish in color.
