Boil the eggs until hard. About 10 mins

Set aside to cool. Once cooled, shell and cut them into halves

Wash and chop the onion, tomatoes, pepper and Courgette.

In a pan, heat the oil and sauté the onions.

Once slightly browned, add in the chopped vegetables an the tomato paste.

Stir fry and once they are cooked, add curry powder, salt and the garlic powder.

Stir well and add the halved eggs. Add a half cup of water and let it simmer until it forms a sauce.

Serve hot with favourite side dish. Mine was served with ugali and fried cabbage.
