Mix all ingredients of dough and knead a soft and smooth dough.and leave the dough to rest for 20 minutes

Now for stuffing chopped all the vegetables finely

Heat a nonstick pan add 2tbsp oil.once oil gets hot add chopped ginger and garlic and cook for half minute then add all vegetables except spring onions. cook for 10 minutes as vegetables leaves water and become softened.do not over cook vegetables should be crunchy. now add soya sauce, black pepper, red chilli sauce, vinegar and salt. mix well and add spring onions cook for 2 minutes and switch off the gas.let it cool for 5 to 10 minutes.your filling is ready.

For making sheets. make small equal size balls from dough.each time roll two balls in puri size shape.put some oil and spread on both puris and sprinkle some maida on both puri. put one on another and roll 8 inch thin chapati.

Now heat nonstick tawa on low flame place chapati on it and cook both side for 10 seconds

Now remove chapati from tawa and slowly separate two chapati to make thin and transparent sheets.make rest of the sheets.

Now put 1to 2 tsp filling on sheet not to much and give one fold then fold sides and seal using maida paste. now roll and seal edges. make rest of the rolls.

Now heat a pan add sufficient oil for frying rolls fry 2 to 3 rolls at a time from both sides on medium flame.

Now serve veg rolls with tomato sauce or schezwan sauce
