  4. 2 tablespoonsketchup
  5. 2 tablespoonshoi sin sauce
  6. 1 tablespoongarlic purée (adjust if using fresh or powdered ing
  7. 1 tablespoonginger purée (adjust if using fresh or powdered ing
  8. 1 1/2 teaspoonssugar
  9. ⚫

  11. 2 tablespoondark soy sauce
  12. 2 tablespoonrice vinegar
  13. 3 tablespoonscola or cherry cola (full sugar, to aid in caramel

    Mix together all the thick ingredients in a suitably-sized ovenproof dish. Stir well

  2. 2

    Add the thin ingredients, and stir well again. I'm using Cherry Coke™ in my marinade

  3. 3

    Place the chicken in the oven dish. Turn the wings until nicely coated in the sauce and allow to marinate for at least 1 hour, preferably overnight

    Preheat the oven to gas mark 7, 220°C (425°F) when ready to cook

  5. 5

    Stir the wings in the sauce again. Put in the oven for 50-60 minutes, stirring every 10-15 minutes

  6. 6

    If the marinade doesn't become as sticky as you'd like, strain it off into a pan and reduce until it is sticky. Pour back over the chicken and pop back in to the oven for 5-10 more minutes

  7. 7

    Check the chicken to see if it's done (juices run clear when pierced with a skewer)

  8. 8

    Finally, remove from the oven, plate up, and drizzle with the sauce from the oven dish. Garnish with herbs, sesame seeds, or matchsticks of cucumber and/or spring onion

I'm a designer/artist and I learned to cook when I started making my own Chinese food over 30 years ago. I'm a lover of my native British food, but recently I've developed a taste for American comfort food, especially sandwiches and BBQ (watching too much 'Diners, Drive-Ins, and Dives' probably). 😸 Unfortunately, we don't have any independent US-style diners or drive-ins in my neck of the woods, so I had to learn from recipe books and the Food Network. I'll also be publishing some traditional UK classics in case any non-Brits want to have a crack at Brit grub.
