Ingredients

4 servings
  1. 1 Tsafflower oil
  2. 1red onion, thinly sliced
  3. 1 tspground cumin
  4. 1 tspground coriander
  5. 1 tspground cardamom
  6. 1/2 tspground turmeric
  7. 1/2 tspred pepper flakes
  8. 3 clovesgarlic, minced
  9. 2 cdiced tomatoes, with juices
  10. 1 Tginger, peeled and grated
  11. 1 cwhole milk yogurt
  12. 1 lbchicken, cut in 1" cubes
  13. 2 ccauliflower florets
  14. 1 Tfresh mint leaves, chopped for garnish

Steps

  1. 1

    In large skillet, heat oil. Add onion and cook until softened.

  2. 2

    Add cumin, coriander, cardamom, turmeric and pepper flakes and stir for 30 seconds.

  3. 3

    Increase heat and add garlic, tomatoes and ginger. Cook, stirring frequently, until tomatoes are slightly broken down.

  4. 4

    Add yogurt and stir until thickened.

  5. 5

    Add chicken and bring to simmer. Reduce heat, cover and simmer 10 min. until sauce is slightly reduced.

  6. 6

    Add cauliflower, cover and cook until tender and chicken no longer pink.

  7. 7

    Garnish with mint.
