Divide the tapioca starch in half. Boil water and slowly pour it into half of the starch, then knead by hand. Reserve a little dry starch to dust if the dough gets too sticky.

Choose small shrimp to fit the dumplings. Trim the shrimp's antennae and legs. Marinate with chopped shallots, 1/2 tablespoon fish sauce, 1/2 teaspoon seasoning powder, and 1 tablespoon sugar. Let sit for 10 minutes, then cook on the stove until the sauce thickens and coats the shrimp.

Shape the dough into small balls, flatten each one, place a shrimp in the center, then fold the dough over to seal.

Boil 1 1/2 cups water (about 350 mL). Add the dumplings and cook until done. Remove and drain in a colander, then rinse with cold water. Sauté chopped green onions in oil, then toss the dumplings in the oil to prevent sticking.

To make the dipping sauce: Melt a piece of rock sugar in water to make a syrup. Add minced garlic and chili, 2 tablespoons fish sauce, 4 tablespoons warm water, the rock sugar syrup, and a little fresh lime juice for fragrance. Adjust to taste for a sweet and tangy flavor. Enjoy the chewy dumplings with the crunchy shrimp shell, dipped in the delicious sauce! 😋😋
