Lentil Cookies with Oatmeal and Chocolate Chips

Puree the lentils with a blender until smooth. Beat the egg with the vanilla and add the lentil puree. Mix.

Soften the butter and add the sugar, mixing well.

Combine everything made so far and sift the flour over this mixture. Mix until everything is well integrated.

Add the rolled oats and chocolate chips to the dough. Knead lightly to combine all the ingredients. Shape the dough into a log, wrap it in plastic wrap, and refrigerate until firm.

Slice the log into 1/2-inch rounds, place them on a baking sheet lined with parchment paper, and bake at 350°F for 12-15 minutes, until lightly golden.
