Semolina flour plays the perfect role in these well mounted muffin alongwith nutrition, high protien and low fat content. Vitamin and fiber rich banana, nuts and seeds are the added factor which won't let you down. These banana muffins are to die for. The aroma and the taste will make you crave for every other day. Easy as you see. Do try it. I would only want to tell you to be gentle while mixing the batter. Do not over mix. You may loose the crumb texture and land up with a rubbery stretchy muffin.

Mash the overriped banana in a bowl. Add the brown sugar,melted butter, honey,vanila essence.

Stir and mix till well combined. Preheat oven at 180°

Add the baking soda,baking powder and salt to the semolina flour. Add this mixture to the wet mixture alternating with the buttermilk.

Add the hot water and mix gently

Add a part of nuts and mix. In the remaining part mix oats for garnish.

Line a muffin tray with liners and scoop 3/4 of each liner.

Garnish with remaining nuts and seeds dusted with some flour

Bake at 170° for first 20 minutes then on 160 ° for another 10 minutes.

Superbly done well mounted banana muffins ready for a healthy start of your day.
