Steps

Peel potatoes and cut into thick wedges. Soak in water for 10. Strain & keep aside.

Add enough water in microwave safe bowl,add 1 tbsp oil and 1 tsp salt,add potato wedges, cover and micro cook for 7-8 mins..they should be 80 percent cooked....or you can parboiled them in big vessel on gas.

Add 1/2 cup water to 2 tbsp corn flour, keep aside. Cut in half and deseed tomato,chopped it into small pieces. Keep all ingredients ready.

In nonstick cooking kadhai add 3 tbsp oil,heat it on high flame till smoke comes out,add tomato pieces,cook on high flame for 2-3 mins stirring occasionally & gently. Remove & keep aside.

Now add parboiled potato wedges, in same kadhai,cook on high flame for few minutes, stirring continuously till they are cooked. Remove and keep aside.

In same nonstick cooking kadhai add 1 tbsp oil add & saute ginger & garlic coarse paste on high flame for few seconds. Add potato wedges, tomato pieces,soya sauce,chilli sauce, tomato sauce,salt to taste,mix and saute on high flame.

Add cornflour mixture,cook on high flame for 2 minutes till it thickens.

Serve Hot garnishing with chopped spring onion greens.
