This is veganized version of Burmese Shwe Taung Noodle. It is also gluten-free and oil-free.
Steps

Place chopped onion, garlic, turmeric, paprika and a tablespoon of water into non stick pan and sautéed for few mins. And then add soy chunks, more water and cook for another 3 mins.

Stir in chickpea mixture and cook for another 3 mins.

Stir in coconut milk and cook for another few mins until it turns to gravy like consistency.

Set out a plate with rice noodles. Ladle the gravy over rice noodles and garnish with onions, cilantro and lemon.
