Bean and Asparagus Salad

I usually make simple bean salad with mixed beans like kidney beans, black beans, pinto beans, garbanzo and so on. It's so helpful to keep that kind of dish in your fridge. For this recipe I used great northern beans and I added asparagus. It makes lovely spring salad. It could be a healthy lunch by itself or with some eggs, chicken or salmon!

Bean and Asparagus Salad

Ingredients

  1. 10asparagus, woody ends snapped off
  2. 15 ozcan of great northern beans, rinse and drain
  3. 1/4onion, finely chopped
  4. 1/2 cupcorn, cooked
  5. 1 cupcoriander, chopped
  6. 2 Tbsplemon juice
  7. 2 tspextra virgin olive oil
  8. to tastesalt and pepper

    Chop the onion finely. I usually buy yellow onions that have a strong flavour. When I use them with salad I spread them out on a plate for a while and the strong flavour fades.

    Boil asparagus 5-6 mins or until cooked. Cut into quarters.

    While boiling asparagus, cook corn if needed, and wash, dry and chop coriander.

    Place beans, corns, onion, coriander in a mixing bowl and combine with olive oil, lemon juice, salt and pepper.

    Add asparagus and combine. Put some more salt and pepper as you desire. Enjoy!
