Bean and Asparagus Salad

I usually make simple bean salad with mixed beans like kidney beans, black beans, pinto beans, garbanzo and so on. It's so helpful to keep that kind of dish in your fridge. For this recipe I used great northern beans and I added asparagus. It makes lovely spring salad. It could be a healthy lunch by itself or with some eggs, chicken or salmon!

Cooking Instructions
- 1
Chop the onion finely. I usually buy yellow onions that have a strong flavour. When I use them with salad I spread them out on a plate for a while and the strong flavour fades.
- 2
Boil asparagus 5-6 mins or until cooked. Cut into quarters.
- 3
While boiling asparagus, cook corn if needed, and wash, dry and chop coriander.
- 4
Place beans, corns, onion, coriander in a mixing bowl and combine with olive oil, lemon juice, salt and pepper.
- 5
Add asparagus and combine. Put some more salt and pepper as you desire. Enjoy!

Bean, Cheese and Broccoli Salad Bean, Cheese and Broccoli Salad
My husband's family grows a lot of cute beans in their fields. I wanted to think up delicious ways of putting those beans to good use.Use canned kidney beans or kidney beans cooked in sugar, whichever you prefer. You might be surprised at the idea of using beans cooked in sugar in a salad, but the other day I saw a TV program that showed that sweet beans are used in things like okonomiyaki and fried yakisoba noodles in a certain region, and I thought that it sounded plausible and tried it out. I make my own sweet beans that aren't that sweet (60-70 g of sugar to 1 cup (200 ml) of beans) and use that in all kinds of recipes. For 2 to 4 servings. Recipe by caramel-cookie cookpad.japan -

I love trying heirloom varieties of beans and wanted to create a bright salad with interesting, contrasting textures. I used San Franciscano beans, which are imported from Mexico by the company Rancho Gordo. Canned pintos or black beans should work as a substitute. This can be served right away but keeps well for meal prep. The flavors will meld better after some time in the fridge. Sharon L. -
