Bean and Cottage Cheese Salad

I made this healthy, colorful and nutritionally balanced salad with my favorite ingredients, mixed beans and cottage cheese.
*The tomato and cucumber are cut into 1.5-2 cm cubes. I thinly sliced the onion, but you can also chop it too.
*Soak the onions in water if desired (I used Early Red)
*For the oil, I recommend Extra Virgin Olive Oil. Recipe by rose12

Cooking Instructions

Cut the vegetables into the sizes of your preference. In a bowl, combine the ◎ marked ingredients well.

Save some cheese as a topping, and mix other ingredients quickly in a mixing bowl.

Garnish with the cottage cheese and sprinkle on the black pepper if desired.

When I discovered this wonderful salad it was the begaining of winter, so the store had the last of the fresh blueberries, I originally had bought the blueberries to make pancakes, unexpectedly my husband invited some family for dinner and I desperately searched my frig and cuboreds for something I could serve has a side dish/dessert and this was what I came up with it became one of our favorites that can be made with many different fruits. (Some of are favorites are, raspberries ,pine apple, peach, strawberry, and orange.) Its makes a great side /dessert dish. Great thing about this salad is you can make it with fresh, canned, or frozen fruit. Finding the jello flavoring used to be a challange but the last few years stores have got better at stocking different flavors of jello .
