Chop up the spring onions and tomatoes into halves. Fry for 3 minutes in butter. Meanwhile whisk the eggs in a separate bowl

Add to the pan along on a low heat and mix in for a couple of minutes until cooked. Turn off the heat and add shredded Basil, salt and pepper and stir.

I served on a piece of buttered toast with grated cheese on top
