Ingredients

  1. 2 cupschopped cold cuts or deli meats
  2. 1large onion, chopped
  3. 4farm-fresh eggs
  4. 1 splashoil or fat to taste
  5. Salt to taste
  6. Spicy ranch-style aromatic avocado sauce:
  7. 2avocados, peeled and pitted, just the flesh
  8. 1 cupthick yogurt
  9. 3 sprigsepazote, chopped
  10. 1 bunchcilantro, chopped
  11. 2 clovesgarlic, peeled and chopped
  12. Juice of three limes
  13. 1fresh green chile de árbol, stem removed and chopped
  14. Salt to taste
  15. To accompany or eat with, warm corn tortillas

Cooking Instructions

    Heat a pan with the fat or oil over very low heat. Meanwhile, beat the eggs with a little salt, chop the onion and the cold cuts or deli meats. Mix the eggs and meat with a touch of salt very well.

    Once the pan is hot, add the mixed ingredients to the hot oil, cover, and let cook until set. Turn off the heat and set aside.

    While the eggs or torta are setting, make the sauce by blending all the ingredients very finely in a blender. Personally, I add a splash of tequila. If you want it spicier, add more chopped fresh green chile de árbol. Once the sauce is made, cut the egg torta into triangles and serve on a flat plate, then top with avocado sauce and bring to the table. Eat with warm corn tortillas.
