A Christmas recipe made with leftovers from the Christmas dinner: ham from the stuffing, cold cuts from the snacks, and onions. It has an aromatic flavor and can be made spicy.
Cooking Instructions

Heat a pan with the fat or oil over very low heat. Meanwhile, beat the eggs with a little salt, chop the onion and the cold cuts or deli meats. Mix the eggs and meat with a touch of salt very well.

Once the pan is hot, add the mixed ingredients to the hot oil, cover, and let cook until set. Turn off the heat and set aside.

While the eggs or torta are setting, make the sauce by blending all the ingredients very finely in a blender. Personally, I add a splash of tequila. If you want it spicier, add more chopped fresh green chile de árbol. Once the sauce is made, cut the egg torta into triangles and serve on a flat plate, then top with avocado sauce and bring to the table. Eat with warm corn tortillas.
