English Shortbread Cookies

Ingredients

  1. 2 sticksbutter
  2. 2 cBetty Crocker yellow cake mix- must be Betty Crocker
  3. 3/4 cwhite sugar
  4. 1egg yolk
  5. 1egg white, stiffly beaten
  6. Chopped nuts, almonds/pecans/etc (optional)

Cooking Instructions

  1. 1

    Preheat oven to 250

  2. 2

    Mix sugar and flour, then rub in butter (pinching butter into flour and sugar mixture). Add egg yolk and work some more.

    Pour into 9x13” pan lined with foil. Don’t grease.

  4. 4

    Spread on egg white and sprinkle with chopped nuts.

  5. 5

    Bake at 250 degrees for 50 minutes.

  6. 6

    Cool, then cut into squares.
