Melt 8 tbsp butter and mix with both sugars until well-combined. Add egg and vanilla, mixing until just combined (if the egg is mixed too much, the cookies will go stiff).

Mix flour, baking soda, and salt in small bowl. Add to wet mixture and mix until combined. Add flour by the tbsp if necessary.

The cookie dough should be between too wet and too dry. Mix with your hands until a ball is formed. Add chocolate chips as you like (1/2 cup is a good place to start).

Preheat oven to 350 degrees F. Cookies will spread/puff out, so givethem some space. Rolling them into balls will give them a wrinkly look.

Cook for 9-11 minutes, or until they are just turning brown. Do not overbake if you want them to be soft and chewy.
