PIRI PIRI means pepper pepper in Portuguese.
I roasted this Whole chicken using my homemade piri piri sauce. Reduce peppers if you can't stand too much of it because that's what the sauce is about😊
Anyways along the line, the Nigerian in me added two tablespoons of yaji mix😁
You can add twist to your recipe , so long there are peppers...

Ingredients

  1. Piri piri sauce
  2. Melted butter
  3. cubesSeasoning
  4. Thyme
  5. 2 tablespoonsyaji mix(optional)
  6. Dried onions
  7. Curry

Steps

  1. 1

    For the PIRI PIRI sauce you will need,* 2 bulb onions
    * 6 red bonnet peppers
    * 6 red eye chilli
    * 1 bulb garlic
    * 3 ripe tomatoes
    * 2 tablespoon lemon or lime juice
    * 2 small ginger
    * cube Seasoning
    * to taste Salt
    * 3 tablespoons vegetable oil or melted butter
    * Cloves
    * 1 teaspoon black pepper(Pour the mix in a pot and blend everything together and steam on low heat. Add seasoning cubes, vegetable oil, lime and salt) Use the sauce for meats

    Whether using it on a whole or Spatchcocked chicken. Use a clean kitchen towel to pat your chicken dry after cleaning thoroughly and set aside.

    Mix the piri piri sauce with the yaji spice, add thyme and curry

  4. 4

    Add the melted butter

  5. 5

    Thoroughly combine everything, add seasoning cubes and taste for salt..

  6. 6

    Coat the chicken thoroughly with the sauce. Every sides of it.

  7. 7

    Marinate for 2hr or more. You can marinate all through the night for intense flavour..

  8. 8

    Preheat your oven to 200 degrees for like 20 minutes

  9. 9

    Put the chicken on a roasting rack and coat the body again with the mix before putting it in the oven.

  10. 10

    If it's a Spatchcock chicken roast for 1 hr 20 minutes. A whole chicken time will exceed that, depending on your oven type.

  11. 11

    After 45 minutes, you can baste the chicken with melted butter.

  12. 12

    When done, serve alongside other dishes...
