Chicken Shawarma with Saj Bread

Combine all the dry ingredients and mix well. Gradually add warm water and knead until a dough forms. Divide the dough into balls, coat with oil, cover with plastic wrap, and let rest for at least 30 minutes.

Roll out each dough ball and cook on a skillet over low heat on the stovetop until done.

(For the shawarma) Slice the chicken cutlets, onion, and bell peppers into strips. Add the spices and mix well.

Heat a skillet over medium heat, add 1 tablespoon oil and 1 tablespoon butter, and cook the shawarma mixture until done.

Place the filling in each bread, roll it up, and repeat with the remaining ingredients.

Heat a grill pan and toast the wraps until they have nice grill marks, like in restaurants. I like to serve it with tahini sauce.
