This dessert is made with Cavendish bananas, which are softer, but it's a lifesaver for those living abroad where it's hard or expensive to find Thai bananas. Cavendish or similar bananas are easy to find in supermarkets. The taste is just as delicious—maybe even better than expected! The recipe is simple, and you can use whatever type of banana you have on hand.

Steps

  1. 1

    Ingredients

A picture of step 1 of Chè Chuối (Vietnamese Banana Coconut Dessert).
  2. 2

Prep the ingredients: Soak the tapioca pearls in water for 1–2 hours. After soaking, peel the bananas, slice them into bite-sized pieces, and soak them in lightly salted water.

  3. 3

Bring about 2 cups (500 ml) of water to a boil in a pot. Drain the tapioca pearls and add them to the boiling water. Cook for about 5 minutes, or until the pearls are soft and translucent. Add the sugar and a small pinch of salt, then pour in the coconut milk and add the bananas. Continue to cook for 5–10 minutes until the bananas are cooked through. Stir in the vanilla extract.

  4. 4

Taste and adjust the sweetness as you like. If the dessert is thick enough, turn off the heat. If it's too thin, dissolve 1 tablespoon of cornstarch (or tapioca starch) in 1 tablespoon of cool water, then stir it into the pot and cook for about 1 minute before turning off the heat. Ladle into bowls and top with toasted sesame seeds and roasted peanuts.

  5. 5

Enjoy! (In the photo, the black specks are from pure vanilla, not dirt or sand!)
