Steps

Make a Soft chapati/roti dough as we prepare for simple paranthas.

Chop Finely onion,capsicum,green chillies,ginger,
tomato and coriander leaves. - 3
Add Salt, Pepper and cumin powders,chopped vegetables and eggs, mix them very lightly.Do not whisk the eggs mixture as it would be thinner.Just Mix the ingredients.

Roll the dough just like making roti or chapati.
Apply desi ghee and little flour speared them evenly on top of rolled Chapati. - 5
Fold it in a triangle shape.Again apply some ghee.Roll the triangle shaped dough again.

Place the rolled chapati on hot tawa on medium flame,cook it till it creates the air packet at this stage paratha will be half cooked.

Once the air packet is created, using knife release the air from air packet of chapati and open it to pour the egg mixture within.With the help of spoon fill the mixture carefully.Now keep it in very low flame.

As the mixture starts cooking,Seal the edges by pressing with spatula.Spread ghee on tawa and fry on low heat from both sides.

Cook till you get brown spots.Switch off the flame.Cut the stuffed eggs parathas with cutter.

Serve immediately.Very yummy.
