  • 5potatoes
  • 1 bunchspinach
  • 1/3onion
  • 1 clovegarlic
  • Salt to taste
  • 2eggs
  • Breadcrumbs to taste
  • 1 teaspoonbutter
  • 8.8 ozOaxaca cheese or 1/2 cup grated panela cheese

Steps

45 minutes
  1. 1

    Boil the peeled potatoes in a pot with water and salt.

    Chop the raw spinach.

  3. 3

    In a pan, sauté the chopped onion and garlic.

    Once the potatoes are cooked, mash them and add the melted butter.

    Then add the spinach, onion and garlic, eggs, breadcrumbs, and cheese.

    Mix everything well until combined.

    With your hands, form small cakes and fry them in a pan with butter or oil.

    Once fried, they are ready to serve. You can accompany them with beans or rice.
