Steps
- 1
Wash the lamb well and pat dry. Prepare all the ingredients and spices.
- 2
Chop the onions and get your baking dish ready. Add the oil and onions, and sauté over medium heat.
- 3
Add the lamb and stir.
- 4
Add the spices shown in the picture and stir.
- 5
Add the garlic and mix everything together.
- 6
Add the vegetables, then add the chopped cilantro. Stir and let cook over the heat for 2 1/2 hours.
- 7
Let it cook until the lamb is very tender. Do not add water; it cooks in the juices from the onions and lamb.
- 8
After 2 1/2 hours, add the vegetables and cook for another 15 minutes. The vegetables don’t take long to cook.
- 9
Add the olives on top.
- 10
Prepare the dough and let it rise for 30 minutes.
- 11
Roll out the dough.
- 12
Cover the top of the dish with the dough, make small holes, and brush the top with egg yolk.
- 13
Place in a preheated oven and bake until the dough is cooked through and turns a light golden color.
- 14
Remove from the oven, cut open the crust with a sharp knife, and serve.
