I found this recipe and it was the very first thing I cooked in my pressure cooker. Came out absolutely wonderful!
Steps

Use paprika, salt, pepper to season both sides of chicken.

Select Saute' on Instant Pot. Melt 1 1/2 TSP. of butter.

Working in batches, brown chicken on both sides about 3 minutes each side. Remove from pot and set aside.

Add remaining butter to pot and melt. Than add garlic and stir 30 to 45 seconds than add the broth.

Add chicken back to the pot and secure lid, pressure cooking for 7 minutes. (Use Rice option to set time.)

Slowly release steam for 3 minutes, than fully release pressure and with a slotted spoon remove chicken.

Press Saute' again and while pot is heating, in a separate bowl mix 2 TBSP of the heavy cream with the cornstarch and whisk.

Whisk remaining cream into the pot than pour the cornstarch mixture into the pot as well. Cook a bit while whisking often until thickened.

Stir in cheese until cheese has melted. Stir in spinach until it has wilted.

Turn off pot and re-add chicken. Coat with sauce.

Put chicken over pasta if desired and sprinkle with parsley and serve.
