Ingredients

  • 1 tablespoonbutter
  • 1/2 cupchopped green bell pepper
  • 1/4 cupsliced green onions
  • 1 clovegarlic, minced
  • 3 cupstomato-vegitable juice cocktail
  • 1 bottle (8 oz)clam juice
  • 1/2 cupwater
  • 1/4 teaspoondried thyme
  • 1/4 teaspoondried basil
  • 1/4 teaspooneed pepper flakes
  • 1bay leaf
  • 1/2 teaspoonsalt
  • 1/2 cupuncooked long grain white rice
  • 3/4 poundfresh shrimp, peeled and deveined
  • to tastehot pepper sauce

Steps

  1. 1

    Sauté green bell pepper, onions, and garlic until tender.

  2. 2

    Stir in vegitable juice, clam juice, and water.

  3. 3

    Season with thyme, basil, red pepper, bay leaf and salt.

  4. 4

    Bring to a boil, and stir in rice. Reduce heat and cover. Simmer for 15 minutes, until rice is tender.

  5. 5

    Stir in shrimps, and cook for 5 minutes, or until shrimps are opaque. Remove the bay leaf and season with hot sauce.

  6. 6

    Melt butter in a large pot over medium heat.
