Ingredients

4 servings
  1. 1/4 cupsoda cracker (or fine dry bread) crumbs
  2. 1/4 tspdried rosemary crushed
  3. 1/4 tspground thyme
  4. 1/4 tspdried mint (optional)
  5. 1/4 tspgarlic powder
  6. 2 tspparsley flakes
  7. 1/4 tspsalt
  8. 1/4 tsppepper
  9. 3 3/4 lbsrack of lamb (or shoulder roast)1
  10. 1 tspcooking oil

Steps

  1. 1

    Combine first 8 ingredients in a bowl mix well.

  2. 2

    Rub rounded fat side of roast with cooking oil. Sprinkle with dry mixture. Press dry mixture against roast.

  3. 3

    Place in 5 quart (5 l) slow cooker, thin end at top and cover.

  4. 4

    Cook on low for 10 to 11 hours or on high for 5 to 5 1/2 hours. Temperature should be 180°F (82°C) for well done

  5. 5

    Skim off any fat from remaining juice. Make gravy.
