Ingredients

  1. 1 cupregular rolled oats
  2. 1/3 cupoat bran
  3. 3 tablespoonsflax seed
  4. 1 cupwhole wheat flour
  5. 1/2 tablespoonbaking powder
  6. 1/2 tablespoonsalt
  7. 1/2 cupchopped roasted salted peanuts
  8. 1/2 cupdried cranberries
  9. 1/2 cupfinely chopped dried mission figs
  10. 3/4 cupnatural chunky peanut butter
  11. 1/4 cuplow-fat milk
  12. 1large egg
  13. 1/2 cuphoney
  14. Finely shredded zest from one lemon
  15. 1 tablespoonfresh lemon juice

    Line a 9 x 13" pan with parchment paper leaving an overhang on the 9 inch side. Coat with cooking oil spray

  2. 2

    In a large bowl stir together oats, oats bran, flaxseed, flour, baking powder, salt, peanuts, cranberries, and figs until well blended

  3. 3

    Mix together peanut butter, milk, egg, honey, lemon zest, and lemon juice until well blended

  4. 4

    Add flour mixture to peanut butter mixture and beat until completely blended

  5. 5

    Scrape dough into pan and, with wet fingers or a rubber spatula, fill pan completely and evenly. Chill dough until firm approximately 30 minutes

    Preheat oven to 300°

  7. 7

    Lift dough out of pan using parchment paper. Cut bars lengthwise, down the middle. Cut bars crosswise, at 1 1/2 inches wide, making approximately 16 bars

  8. 8

    Place bars about 1 inch apart on the baking sheet lined with parchment paper.

  9. 9

    Bake bars for 20 minutes, or until lightly browned and somewhat firm to the touch.
    Remove from oven and let cool completely.
