This is a very nutritious sandwich designed to make use of leftovers from parties, especially when carnitas are served. It's a classic Tapatío sandwich, but made for kids and anyone who doesn't eat spicy food.

This is a very nutritious sandwich designed to make use of leftovers from parties, especially when carnitas are served. It's a classic Tapatío sandwich, but made for kids and anyone who doesn't eat spicy food.

Place all the broth ingredients in a clay pot over low heat. Stir constantly to prevent sticking or burning. Cook for at least 20 minutes, then turn off the heat and let cool before blending.

While the broth ingredients are cooking, prepare the bolillo rolls. First, spread them with mashed or refried beans, then add the pork, and finally top with the marinated onions.

Next, blend the broth very finely and bring it to a boil in a clay pot over low heat. Once boiling, pour some of the sauce inside the sandwich, close it, dip the sandwich in the broth, and remove.

Place the torta ahogada on a flat plate and pour more tomato broth over it. Serve hot.
