Chop carrots onions and celery. Fry gently in olive oil. Brown off the mince and add some passata

Meanwhile make the bechamel. Bring milk gently to the boil. Add the butter at room temperature. Turn heat down low. Whisk and keep whisking. Add flour a bit at a time. Keep whisking until the sauce is nice and thick. Add some grated nutmeg

Get the lasagne sheets. Add a bit of mince, bit of Parmesan. Roll up and put in a baking tray. Continue with the rest of the ingredients

Sprinkle with Parmesan. Add passata and bechamel. Give a little mix, add more Parmesan. Bake at 180 for about 35-40 mins :)
