This recipe is easy and also tasty, the thing is the preparation that takes time a bit. You know you have to peel off all the ingredients, chop them off then blend them in a blender or grind them using traditional stome and mortar.

The cooking process doesn't take that much energy because basically you just need to put them in a steamer then leave them to cook.

The recipe varies from one place to another, this is how we make our pepes 😊

It's hard to explain how to wrap the chicken in the leaf so for more info please reffer to Google or Youtube.

Why do the banana leaf have to be grilled first? It is to make them softer and more shiny and to release its aroma.

Ingredients

30 minutes
  1. 2 tbspcoconut cream
  2. Main Ingtedient;
  3. Equipment:
  4. Other Ingredients:
  5. Turmeric Paste:
  6. Toothpicks, 5 divide into 2 to make 10
  7. 5banana leaves that's been grilled a bit and cleaned
  8. Chicken powder
  9. Sugar
  10. Pepper
  11. Salt
  12. 1/2 kgchicken, divide into 5 or any kind of chicken parts
  13. 12champignon mushrooms (optional)
  14. 1 bunchthai basil leaves
  15. 10birdeye chillies
  16. 2green onions, cut into 2 cm
  17. 2 stalkslemongrass, smashed and cut into 10 parts
  18. 5Indonesian bay leaves
  19. 4 cmturmeric, peeled and chopped
  20. 10candlenuts
  21. 10garlics, peeled and chopped
  22. 15shallots, peeled and chopped

Steps

30 minutes
  1. 1

    Blend the turmeric paste ingredients in a blender until it becomes a paste. Or you can use stone mortar and pestle.

  2. 2

    Put your chicken in a bowl. Add in the paste, salt, sugar, pepper, chicken powder and coconut cream. combine them all until well coated. Put in the fridge for 30 minutes to marinate.

    Take your banana leaf. place in the middle of the leaf and take 2 or 3 chopped green onions, some basil leaves, 2 Indonesian bay leaves and some paste. Add 1 chicken, add another paste, add in 2 of your birdeye chilles, some basil leaves, another green onions, some mushrooms and some paste. Fold then secure with some toohpick. Do until everything is finished.

    Steam in a preheated steamer until cooke about 15-20 minutes.

    Serve
