Ingredients

  1. Cake Ingredients
  2. 3 cupsall purpose flour
  3. 3 cupsgranulated sugar
  4. 3 teaspoonsbaking powder
  5. 1/4 teaspoonbaking soda
  6. 1 cupplus 2 tablespoons un sweetened cocoa piwder
  7. 1/2 teaspoonsalt
  8. 3large eggs
  9. 1/2 cupmilk
  10. 2 teaspoonsvanilla
  11. 1 1/2 cupsboiling water
  12. Frosting and Filling Ingredients
  13. 3 1/2 teaspoonsunflavored gelatin
  14. 3 cupscold heavy cream
  15. 1 cupconfectionery sugar
  16. 2 teaspoonvanilla extract
  17. 3 tablespoonsunsweetened cocoa powder
  18. About 1 /4 cup fresh strawberry syrup, recipe in my profile
  19. Fresh strawberry syrup. Boil 1 cup water with 1 cup sugar and 1/2 cup fresh strawberry strained purée and cool

Cooking Instructions

    Make Cake

    Preheat the oven to 350°F. Spray 4- 8 inch cake pans with bakers spray.

    In a large bowl whisk together flour, sugar, cocoa powder, baking powder, baking soda and salt.

    Mix milk, eggs and vanilla together and stir in flour mixture until wet. Then slowly stir in boiling water and then beat 1 minute until smooth.

    Pour into prepared pans and bake 20 to 25 minutes until a toothpick comes our just clean. Cool in pans 10 minutes then turn out to racks to cool completely.

    Make Filling and frosting.

    ‘Dissolve gelatin in 1/4 cup cold water.

    Heat a small skillet of water, place bowl of gelatin in the simmering water until clear, turn off heat but keep gelatin in the warm water to stay liquid until ready to use.

    Beat cream to soft peaks in a large bowl.

    Add cocoa powder, sugar, gelatin liquid and vanilla and beat until just firm peaks form.

    Assemble Cake.

    Place one cake layer bottom up on a plate.

    Brush with strawberry syrup.

    Top with some chocolate filling.

    Add second cake layer, bottom up and brush with strawberry syrup and top with some filling.

    Add third layer, bottom up, brush again with syrup and add some filling.

    Finally place last layer, bottom up and frost entire cake. Refrigerate at least 6 hours before slicing.

    Garnish with strawberry’s, chocolate and sparkle colored sugar.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. It said it needed oil but no we're in the instructions does it say to add it. So I ended up forgetting about it
