Ingredients

  • 1 lb (2 oz)parboiled rice (500 grams)
  • 1onion
  • 1zucchini or pumpkin
  • 2potatoes
  • 2carrots
  • 1tomato
  • 3garlic cloves
  • 1 handfulgreen peas, if available
  • Some parsley
  • 3bay leaves
  • Spices:
  • 1 tspsalt
  • 1 tspblack pepper
  • 1 tspred pepper
  • 1 tsppaprika or red pepper
  • 1 tspturmeric
  • 1 tspground ginger
  • 1 tspcumin
  • 3cardamom pods
  • 1chicken bouillon cube
  • 3 tbspolive oil

Steps

  1. 1

    First, boil the rice for no more than 5 minutes, then drain it. Wash all the vegetables and grate them, except for the potatoes, which should be cut into small cubes.

    Add the vegetables to the rice along with the spices and olive oil. Mix well.

    Let the rice absorb the mixture for 5 minutes, then steam the rice covered with plastic wrap for no more than 10 minutes. Serve hot.
