I had some amazing food cooked by a friend from a Moroccan family at the weekend. That inspired me to make this with my #seasonsupply pumpkin

Preheat the oven to 180c

Slice the pumpkin, onion, pepper, garlic and chilli. Place in a roasting pan with the tomatoes

Add the olives, thyme leaves, ras el hanout and harissa paste.

Mix in the chicken to coat all the ingredients in the spices. Place in the oven for 20mins

Meanwhile boil the quinoa as per packet instructions and a stock cube. Add seasoning and thyme leaves in the last minute of cooking.

Remove the roasting dish from the oven

Serve and enjoy 😊
