Ingredients

  1. Jamun puree
  2. 500 gJamun/ Wild Indian Java Plum:
  3. 50 gRaw sugar/boora:
  4. 1 tablespoonBalsamic vinegar:
  5. Whipped cream filling
  6. 50 mlMilk, tepid:
  7. 1 1/2 teaspoon– Gelatin:
  8. 100 gWhite chocolate:
  9. 400 ml– Single cream:
  10. 30 mlClarified butter/ghee, melted, cooled:
  11. 50 gRaw sugar/boora:
  12. Topping
  13. 1 teaspoonBrown sugar:
  14. 1 teaspoonLime juice:
  15. – Pinch Himalayan pink salt
  16. Fresh mint to garnish

Cooking Instructions

    Jamun puree

    – Wash the jamun well, drain, ass 50g sugar. Leave to macerate for about 30 minutes.

    – Mash well with clean hands, removing as much pulp as possible.

    – Blend the pulp until smooth, stir in the balsamic vinegar. Chill. Can be made a day in advance if need be.

    – Reserve 1/2 cup for topping.

    – Add 1 tablespoon brown sugar to this reserved cup, and microwave for 30 seconds, full power.

    – Stir to mix, then stir in lime juice and salt. Chill.

    Jamun Mousse

    – Melt the white chocolate
