Chayote with Njahi

Dolichos, turtle beans, the black bean, are a type of legume mostly referred to as *Njahi*.
The black bean or njahi is a very nutritionally rich food. It is high in protein, folate ,iron, vitamin B6, calcium, magnesium and phosphorus.
It is good for pregnant mothers and nursing mothers to strengthen bones and for milk production. It is good for managing diabetics, lower blood pressure, maintain healthy bones, weight loss, dieting. They are known to cause gas to some people.
Njahi takes long to cook, so one needs to be patient or soak them before cooking.

Boil your Njahi and let them dry completely

In a Sufuria, put a little amount of cooking oil. Let it heat and add your onions, cook for a minute or two and add the garlic - ginger paste, cook for two minutes. Add your tomatoes and let them cook for two minutes, add the tomato paste, cook for 3 minutes. Now add the Chayote let them cook for 3 - 5 minutes.

Add the Njahi.

Add a glass or two of water, let it boil and reduce the heat, cover to let the Chayote cook till soft. When ready remove from heat, let it rest a little and serve with rice, chapati, ugali, rotti or even bread, or just take it alone as a meal.
