Mashed potato cakes

Mashed potato cakes , are soft and cheesy from the inside and golden crispy from the outside.
Potato cakes are good solution for leftover mashed potatoes however with freshly cooked potatoes also you can make potato cakes or pancakes.
It is a simple recipe but result is great. They are just D.E.L.I.C.I.O.U.S.

Place the potatoes into a pot. Cover with salted water. Boil and cook potatoes until soft and tender.
Peel off potatoes skin. Add in butter, salt and pepper. Mash until well combined. Then, stir in milk. - 3
Now add grated cheese and chopped chives. Mix all ingredients well together.
Place the potato mixture in the fridge for 30 minutes to set. - 4
In this step, take 2tbsp of mashed potatoes and shape the potato mixture into small cakes (as you see in the photos).

Now, dip each potato cake in the flour, then dip into the beaten egg and finally coat each one with bread crumbs.

Heat the oil in a skillet, add potato cakes to the pan and fry them for 5-6 minutes each side until brown and crisp both sides.
