I've always said that chicken is very versatile, easy to prepare, and can be made in a thousand ways. This is one of them.

Cook the chicken breast as you prefer. Let it cool slightly, then shred it finely.

Roast the tomatoes, garlic, and onion. Once roasted, blend them with water and salt until very smooth. If you like, strain the sauce. Pour it into a large pot and let it simmer. Set aside.

Finely shred the chicken breast and add the flour. Mix very well.

Beat the egg whites until stiff peaks form, then add the yolks and beat again.

Add the chicken to the egg mixture and mix very well.

Heat the oil in a skillet. Once hot, use a spoon to drop small portions of the mixture into the oil and fry, turning so they brown on both sides.

Heat the sauce just before serving and pour it over the chicken patties.

I served them with white rice.
