Flourless Chocolate Cake vegan, GF, NF, no added sugar & still delicious!

I made this for my partner who is a vegetarian, allergic to nuts, and dairy-intolerant. I eat Paleo, so together we were a nightmare to feed. Although not strictly Paleo, this cake satisfied both tastes. In spite of being #vegan, #dairyfree, #nutfree, #glutenfree and has #noaddedsugar, it actually really yummy.

Please note that because the cake has no gluten, it breaks easily. I sometimes make it in my ceramic quiche dish to avoid moving it - it's easy to cut into pieces from there and serve.

Ingredients

8-10 servings
  • 240 gcooked black beans (or 1 400g can, drained)
  • 100 gdates, pitted
  • 175 mlcoconut oil
  • 80 gmilled flaxseeds
  • 80 gcocoa powder
  • 2 tspbaking powder
  • 2 tspbicarbonate of soda
  • 150 gmaple or carob syrup
  • 1 tspsalt
  • For Icing:
  • 2avocados - they should b very ripe
  • 4 tbspcocoa powder
  • 4 tbspcarob or maple syrup (optional)
  • For decoration:
  • 100 gberries

Steps

  1. 1

    Preheat the oven to 180C (fan). in the food processor, blend the drained beans, dates and coconut oil together to a smooth paste

  2. 2

    Add other ingredients and blend until everything is well mixed together.

  3. 3

    Pour into 20cm cake tin lined with baking paper and smooth the top.

  4. 4

    Bake for 45 minutes in the centre of the oven OR until a toothpick comes out clean

  5. 5

    Leave to cool before placing carefully on a serving plate (because it has not gluten, it breaks easily)

  6. 6

    To make the icing, scoop the avocados out of their skin and blend in a food processor. Add cocoa powder and maple syrup to taste, and blend until smooth.

  7. 7

    Use a palette knife to spread the icing on top of the cake. Dust with cocoa powder and decorate with berries or orange peel.
