Ingredients

  1. For the Skewers:
  2. 1.5 poundspork loin, tenderloin or shoulder, sliced into thin rectangles (.25 inch by 1 inch by 2 inches, for 24 pieces)
  3. 1shallot, minced
  4. 2garlic cloves, minced
  5. 1 tbsp.grated ginger
  6. 3 tbsp.chopped lemon grass
  7. 1 tspground cumin
  8. 1 tspground coriander
  9. 1.5 tspturmeric
  10. 1/4 tspcayenne pepper
  11. 1 tbsp.fish sauce
  12. 1 tbsp.lime juice
  13. 2 tspsoy sauce
  14. 1 tbsp.brown sugar
  15. 1/2 cupcoconut milk
  16. Cilantro and basil leaves for garnish
  17. Store bought peanut sauce

Steps

  1. 1

    Prepare the skewers. Put pork in a mixing bowl. In a separate bowl, stir together shallot, garlic, ginger, lemon grass, cumin, coriander, turmeric, cayenne, fish sauce, lime juice, soy sauce, brown sugar and coconut milk.

    Pour over the meat and coat well. Marinate 30 mins to overnight.

    Soak 12 bamboo skewers in water.

  4. 4

    Grill, broil or on a stovetop grill for 3 mins on each side until cooked through and lightly browned.

  5. 5

    Transfer to a platter and garnish with cilantro and basil leaves. Serve with peanut sauce.

  6. 6

    Thread 2 slices of pork onto each skewer, keeping meat as flat as possible.
