Ingredients

4 servings
  • 2 headsRomaine lettuce, washed and chopped
  • 3large hard-boiled eggs, chopped
  • 1small jicama, peeled and shredded
  • 1yellow bell pepper, chopped
  • 1 cgrape tomatoes, halved
  • 1 ccarrots, peeled and shredded
  • 1/4 cBleu cheese, crumbled
  • 12 ozchicken breast, cooked and chopped

Steps

  1. 1

    Prepare all ingredients and layer in four quart-sized jars.

    LAYER:
    chicken
    tomato
    yellow pepper
    carrots
    jicama
    eggs
    cheese
    lettuce

  3. 3

    Serve with your favorite dressing - just add the carbs!
