  1. for the cookies:
  2. 2 1/2 cupsall purpose flour
  3. 1 tsp.baking powder
  4. 1 tsp.salt
  5. 1 stickunsalted butter
  6. 2 cupssugar
  7. 2eggs
  8. 1 (15 oz.)container Ricotta Cheese
  9. 3 tbsp.lemon juice
  10. zest of 1 lemon
  11. for the glaze:
  12. 1 1/2 cupspowdered sugar
  13. 3 tbsp.lemon juice
  14. zest of 1 lemon

    In a medium bowl, combine the flour, baking powder, and salt.

  2. 2

    In a large bowl, combine the butter and sugar. Mix with electric mixer until light and fluffy. Add eggs ,beat until incorporated. Add Ricotta Cheese, lemon juice, and lemon zest. Beat until well blended. Stir in the flour mixture.

    Line baking sheets with parchment paper. Spoon the dough onto the baking sheets. Bake for about 15 minutes, until slightly golden on the edges. Remove from oven and let cookies rest on baking sheets for about 20 minutes.

    For the glaze:

    Combine all ingredients in a bowl and stir until smooth. Spoon the glaze, about 1/2 tsp. onto cookies. Let glaze harden for about 2 hours. Enjoy!
