Spelt flour pancakes

I like to use wholemeal spelt flour for this but other types should be fine and you can even combine with a little bit of coconut flour or other types. The great thing about spelt flour is its very digestible and leaves you feeling satisfied but light.
The proportion of milk and flour can vary depending on desired thickness.

Mix the dry ingredients together in a bowl

Stir in the milk

Add the eggs and mix with a blender
- 4
Leave to rest for at least 5 -10 minutes

Heat some butter or coconut oil in a frying pan at low-medium heat and pour one ladle of the mixture per pancake. Once the first bubbles appear and start to burst, turn over the pancake, cook for about a minute and you're done!

You should have enough for 4-5 pancakes. Great with some fresh blueberries and maple syrup
