Blend the scotch bonnet, ginger, garlic and 1onion. Mix with oil, Maggi,salt,curry, thyme and other spice of your choice.

Robb it all over the chicken and marinate for 2hrs.

Chop the Carrots, Irish potatoe, Apple and Green pepper into cubes, mix it with your spiced mixture and place it beside the chicken.

Preheat your oven and bake/grill in 180°c for 1hr or more. Garnish with you sliced onion
