Ingredients

3-4 people
  • 11/2 bowlrice
  • 2 tbsplemon juice
  • 1 tea spoonmustard seeds
  • Pinchasafoetida
  • 1 tspurad dal (black dal/lentil)
  • 1.5 tbspchana dal (gram dal/lentil)
  • 4 tbsppeanuts
  • 4 tbspcashew
  • 1/4 tspturmeric powder
  • 2dried red chilies
  • 1-2green chili slit (skip if making for kids)
  • 1 sprigcurry leaves or kadi patta
  • Salt and oil (as required)

Steps

  1. 1

    Cook the rice till fully done but not mushy

  2. 2

    Heat a pan with oil on a medium to low flame. When it turns hot, add peanuts/ cashews. Fry until half done. Add chana dal and urad dal. Fry until the dals turn golden.

  3. 3

    Add mustard & allow to crackle. Next add ginger (Optional), chillies and curry leaves. Add asafoetida(hing) and turmeric.

  4. 4

    Optional :soften the roasted dals. Pour 1 to 2 tbsp water into it the hot seasoning. It will evaporate very quickly and soften the dal.

  5. 5

    Mix everything well along with the dals. Keep the rice covered for 20 to 25 mins.

  6. 6

    Serve lemon rice with plain yogurt, papad,pickle or coconut chutney.
