Grilled Kofta with Yellow Rice and Tahini Salad 🍲

Kofta is a type of kebab that’s delicious and very easy to make. For extra flavor, if you’re grilling it in the oven, place a lit piece of charcoal on a piece of foil in the center of the pan, drizzle a drop of oil on the charcoal to create smoke, and leave it in the oven for a while to give the kofta a smoky flavor. Alternatively, you can put the charcoal in the oven while cooking, and add a small piece of beef fat on top of the charcoal to keep the smoky aroma going—this will make the taste amazing. 😉😉 This is one of the secrets of restaurant-style kofta, which is famous in Egypt. Place half of the ground beef (about 1.1 pounds/500 grams) in a food processor with the onions, parsley, salt, spices, and beef fat. Process until you get a smooth, cohesive mixture.

Transfer the mixture to a bowl, add the remaining ingredients, and mix again.

Shape the mixture onto wooden skewers, alternating with a piece of tomato and onion on each skewer. Alternatively, you can shape the kofta into long, thick fingers using a wooden spoon handle, as some types of meat shrink during cooking.

Grill over charcoal, on a grill, or in the oven, turning to cook evenly on all sides until fully cooked through.

Serve with yellow rice and tahini salad, or with pita bread.
