
Ground Turkey and Root Veg Hash with Spinach-Dill Puree

Preheat oven to 400 degrees. Toss root veg and onion with oil and season with salt & pepper. Roast veg for 20-30 minutes, stirring once, until slightly caramelized.

Make puree, add all ingredients to a high speed blender and puree. A slightly chunky texture is preferred

Just before the roasting is complete, add ground turkey to a saute pan and cook through, about 5 minutes. Toss sausage with root veg
- 4
To serve, portion hash onto 4 plates and drizzle with puree.
