My favourite curry! This recipe uses my previously posted balti curry paste but you could use store bought for convenience

Heat the oil in a saucepan, add the pepper and fry off with the onion until translucent

Add the chicken then stir in the balti paste and spices, cooking for 2 minutes to brown off the chicken

Add the tomatoes and stock. Let simmer for 15 minutes. Adjust to taste - add chilli powder if you like or some mango chutney or sugar to sweeten. Balti shouldn't be too spicy but you know best how you like it!

Serve with boiled rice and naan bread
