Mpusuo is a Ghanaian dish which is definitely not for the fainthearted. It's spicy, hot nature and special method of cooking makes it a special delicacy. It is best served with kenkey (fermented corn dough dumpling), banku (fermented corn and cassava/yucca dumpling), rice, potatoes etc.

Steps

Combine onions, green chilli, jalapeños, rosemary, garlic, ginger, cloves, aniseed and selim pods in a food processor and blitz till coarsely chopped.

In a large pot, place the pork which has been washed, cleaned and cut into bite sizes. Add salt, chilli powder, sugar and tomato puree and give it a good stir.

Pour over the pork, the contents of the food processor and stir.

Add the alcohol and stir. Quickly cover the pan with plantain leaves and secure the leaves by tying a cord around the pan. This is done to prevent the alcohol and steam from escaping since pork would cook on steam. Where plantain leaves are not available, a tight-fitting lid would do.

Cook on medium-high heat for about 35 minutes, tossing every 10 minutes.

Carefully remove leaves/lid and serve.
