Ingredients

45 minutes
6 servings
  • 1.1 poundsbeef
  • 8 1/2 cupswater for boiling beef
  • 2green onions, thinly sliced
  • 2 stalkscelery, thinly sliced
  • 1 stalklemongrass, bruised
  • 3/4 inchginger, peeled and bruised
  • 1 tablespoonmedium-sweet soy sauce
  • 1/2 teaspoonvinegar (optional)
  • 2radishes, peeled and chopped (see tips)
  • 2 tablespoonsvegetable oil, for sautéing the spice paste
  • Spice paste:
  • 3 clovesgarlic
  • 5shallots
  • 1/2 teaspoonwhole peppercorns
  • 1 teaspoonsalt
  • To serve:
  • 3.5 ouncesfried soybeans/peanuts
  • 0.9 ouncesfried shallots
  • 3key limes
  • chili sauce to taste
  • crackers
  • 6servings of white rice (as desired)

Steps

45 minutes
  1. 1

    Boil water in a pot, add the beef, and cook until tender. Remove the beef and cut into cubes. Strain the boiling water and return it to the pot, heating it over the stove.

    Heat 3 tablespoons of vegetable oil, sauté the spice paste until fragrant. Remove and add to the beef broth.

    Add the radish, green onions, celery, ginger, and lemongrass, cook until boiling and the flavors are absorbed into the beef. Taste and adjust seasoning. Add vinegar if desired, stir well, and remove from heat.

    Take a bowl, pour in the beef soup, and sprinkle with fried soybeans and fried shallots.

    Serve with white rice, chili sauce, and crackers. If desired, add medium-sweet soy sauce and a squeeze of key lime. If fried soybeans are unavailable, substitute with fried peanuts.

    To prevent the radish from being bitter, after chopping, sprinkle with salt and gently squeeze, then rinse thoroughly. Boil water and cook the radish until the water boils once. Drain and discard the water.
