In a pot over medium heat, combine the milk, fine semolina, and sugar. Stir constantly until the mixture thickens and the semolina grains open up. Add the orange blossom water, let it boil for 1 minute, then pour the mixture into a serving dish.

To prepare the ashta (clotted cream), bring the milk to a boil, then add the vinegar. When the milk curdles, collect the curds and strain them. Let them cool completely, then add the canned cream and whisk together. Spread the ashta over the cooled semolina layer.

When serving, top with fresh fruit and mixed nuts, and drizzle with simple syrup.
